One negative of the open world is that it is very easy to miss things if you only follow the main plot line. One great thing about open world is that there is so much left to see on a second play thru if you rushed thru the first time.
The NPC stuff is almost impossible to do without looking info up. Just like in other DS games.

Again, not that I have anything against but how did you spent 309h into the game and defeated just up to Royal Knight Loretta, Godrick and Rennala?
I mean, exploration is good, combat can be good too but it is not hard to find the bosses, I really am curious to know how was your experience so far (and if you need some help).
(I also checked your DS3 progress, you stopped kind of on the first 3rd of the game with 170h)
I did it playing like 30min to 1h per day so average of 45min/day, give or take some 150~200 days to beat it.
Last thing I would do is restarting because I was lost of questline (really, I would not).
