At the end of the day, two-handing a katana and being trickier/spammier also works. Charge R2 to roll catch and running R2 to capitalize on panic. Or, use a shield.
It's also not a build with any particular weaknesses. You can try crossbow, but he'll just roll through it to poke you again; same goes for spells and incantations.
If I were to think of ashes of war that might help, you'd have to look for those that always fire no matter what your opponent is doing. Storm stomp as well as the stamp ashes of war come to mind. Then see if there's a way to deal with the bleed build up so you can trade a few times. Storm stomp works with dual wielding because the stomp puts the opponent in a stagger allowing you to get a free hit in with both weapons. You can also try barbaric roar (release R2 as you're about to get attacked to gain poise).
95% of players who spawn into invasions/arena with dual spear are total trash and if youre decent at the game you can outplay the hell out of them with your own set of spears.
