With mouse and keyboard controls left and right hand attacks are bound to left and right mouse buttons, respectively.
To use your staff you must have a spell selected (spells are browsed using the arrow buttons on your keyboard) and attack with the staff (click the left mouse button).
If you have a bow equipped in your left hand you need to two-hand it in order to attack with it. Hold E and click the left mouse button to two-hand the weapon in your left hand. Now you should be able to fire your bow with the right hand mouse button.
It's no problem to use weapons left or right hand, 1 or 2 handed, and to change between them whenever you want. You can also rebind the most buttons and controls until you're comfortable with them. When you're new to Fromsoft games the controls seem to be a bit weird at first, but after some time you'll get used to it. Don't give up, just take your time to figure out such things. You'll get a muscle memory later and press the right buttons automatically.
But it is not the game's fault and it should work fine. I play on keyboard and mouse as well.
When you have both weapons in hand you leftclick to attack with your righthandweapon and you use rightclick for your lefthanded weapon. if you press e+leftclick you will twohand your righthand weapon. If you press e+leftclick again you will have both in hand again. And if you click e+rightclick you will twohand your left hand weapon.

You can also switch between weapons using the right and left arrow buttons. If you press the escape button, go into the equipment menu you can change your selection of right and left hand weapons. It sounds as if you have just deselected your weapons.
:( I just hav a very old one,and on my friends computer it dos not work I can try,but last time I played wih a controller is ages,not my thing really :D
Can you be precise? Are you saying that when you mean to cast a spell, you (option 1) physically swing the staff instead? Or do you (option 2) swing your empty offhand instead of casting a spell? Or (option 3) shake the staff, and your character head back and forth for a bit while moving more slowly?
Sounds like you're hitting the wrong button, have you rebinded any of the controls? You're sending what would be on PS a R2 button command out when you mean to send a (PS) R1 button command. Or if it's option 3, you are sending the spell cast command out, but the spell is failing for some reason. Totally different issues though so it's important to untangle.
It's honestly worth getting a controller just to play this game, but if you don't want to/can't do that, I'd undo any custom keybindings and try to learn how to play with the default. Some of it is weird but there are a lot of complicated ones and it's easy to make custom keybinds that create conflicts/prevent you from doing something you need to do.
Thanks for your replies :) is option 2,yes I did change the arrows into 1,2,3 and 4. 1 and 2 are the left and right hand,I empty my right hand and hold only my staff,but I fist along :P, I found a old playstation controller I will try after my doggy walk to use that one,and see if the issue still there,but Iwanna say playing controller will take some hours to learn :P
No controller needed although I don't know what issue you're having.
K&M player here, played thousands of hours through all Dark Souls games and ER just with a very simple office mouse and keyboard. It's all about personal preferences, you don't need to use a controller when you don't like it.
