Is there a way to tell what NG+ level your on?

I have no memory of if I'm in +1, +2 or so on a character.
Bar going all the way to the end and killing the Elden Beast, is there any way to actually know?

No real way that i know of
but if you always buy all the armor maybe count how many of one type of boss armor

or you can kill a mob and see how much runes they give and find out what ng+ you are on by how much you get i am sure there are lists out there

^ Basically this yeah, but keep in mind you get an "overkill bonus" on dropped runes if you oneshot something so pick an enemy you can't kill in one hit

Checking runes drops is probably the best way but it only works until ng+7. After that there will be no difference.

Not sure, but maybe count how many snake hunting spears you have in your inventory given if you haven't sold any.

You can only ever have 1 of those at any given time afaik
