I was just wondering if there is any info on who they were and what they did. They are so huge and yet nothing mentions them which seems odd but maybe I missed something.

Hol' up, this sounds crazy, but what if we assume Radagon might be related to the giants, too, and take in account that he wasn't the only "miniature giant" - Milos is another one of such cases.
Astrologers simply being another type of giant from which humanity descended isn't too farfetched, I mean, this is Fromsoft we're talking about.

i don't think radagon is straight up related to giants since you know what the plot twist is, and we are given a race for marika, i think is more on the lines of curses
but it is confirmed there's a race of humans descending from the giants, the northeners in the character tutorial
heck there's dragon people, space people, silver people.... japanese people?

Hm interesting and sounds plausible to me since the clothes look a lot like astrologer clothes.
