As for NPC dialogue - if you really need it you will have to note that down on a physical piece of paper. You may do so in a non-hardcore, calm manner.

This guy says it way better than I can but it's fact one of the worst part of the game that just flat out makes it unenjoyably but fanboys going to fanboy you know
You do realize how immature this sounds? Sometimes, people genuinely have a different opinion than yours. Not saying it is above critique, but healthy dialogue won't happen if you dismiss anyone who disagrees with you. I, for one, would not want a Bethesda quest marker showing me where to go each step of the way. Part of the fun of Elden Ring was wandering in a giant world and stumbling into dungeons, camps, and field bosses.
I don't think anyone is suggesting a Bethesda quest marker. Just a basic quest log. Games have been doing it for years. Acting like the game becomes drastically different because of a quest log is beyond silly. Especially if it's one that requires pressing start to even view.
Go to your store search bar and type "Ubisoft" problem solved.
