I posted a short clip to Reddit a few months back dedicated entirely to that encounter.
Those statues have always been a pain to deal with until I learned I could parry them.
I only just played through DS3 for the first time this month and Gundyr was one of my favorite bosses.
Loved getting knocked into the air and drop kicked back to the ground. :p
A few people mentioned that to me on Reddit!
I didn't even know that was possible in DS3. I cowarded out of crab encounters with my bow during my playthrough. :p.
If only I'd known I could parry them!
Definitely is not possible in Elden Ring though, sadly.

Saw the Gwyn clip. You been doing this since the DS1 days?
If you're comfortable with dual wielding uchigatanas, it's basically the same thing. You get the same powerstance moves.
Also I played the Fromsoftware games backwards.
I started with Elden Ring and then bought the Dark Souls trilogy when it was on sale on the EU/UK BandaiNamco site around December/January.
Parrying in Dark Souls 1 feels a lot easier than Elden Ring.
It's different feeling in DS2 and DS3 as well. Had to get used to it for both games.
I parried the crap out of DS2 though. It was my favorite of the three.
Advantages over using a second katana:
The powerstance L1 combo consumes roughly 20% less stamina.
NOTE: As of Patch 1.08, the speed and distance of some attacks has been increased and the recovery time has been reduced.
@ sale: You should visit these "when is dark souls going on sale" threads and drop some knowledge. Maybe people could use some tips. That's cool @ playing them all.
And agreed, Dark Souls 1 parrying is easier. My main DS1 character was a Target Shield parrier. But when I started Elden Ring, I couldn't parry. But backstabs were harder in DS1, so there's that.
So I used that for quite a while... but it was ugly!
Eventually I found the Silver Knight Shield, like the biggest, chonkiest medium shield with a super high stability. So I went with that as my 'blocking' shield.
Randomly decided to parry some Silver Knights in Anor Londo with it and found that it didn't feel any different to me from my Heater. Parrying was just so generous in DS1.
My first few hours in DS2 brought me crashing back down to Earth though. :)
And the Buckler and Target Shield had some minor differences but the same parry window. It's just that the Thief started with the Target Shield.
Something tells me DS2 is just hard.
it's just that parrying in DS1 seemed so easy to me that the windows even between a parrying shield and a medium shield felt practically same.
You've not played DS2?
I'm seriously feeling like Dark Souls 2 is my favorite of the trilogy.
It rewards a more slow, methodical approach. And I love the zones and the music. Plenty of memorable bosses, too.
Naw, no DS2 yet. I took a long break between DS1 and ER for other games. Sounds fun though.
