You probably know that bleed adds arcane scaling to both weapon damage and the bleed buildup. A Zweihander might be a decent option, or the Great Stars could be very effective with extra bleed on it.
As for dragon incantations, there are two types.
Dragon Communion are the actual dragon spells you get from dragon hearts. These are buffed by the Dragon Communion Seal (the red one). It scales well with arcane, so add in some bleed spells like Flies and Bloodflame Blade.
Dragon Cult spells are the lightning based spells. These are buffed by the Gravel Stone Seal.
Placidusax's Ruin is neither. It is the most powerful (and costly) dragon-type spell, however.
I tend to let my mimic do the spell casting: they have infinite focus and I don't want to dump loads of levels into that. If you don't have many points in faith, get the ice and decay dragon spells, they are very useful support spells for wearing enemies down.
