Short of that, the burn the first guy down strat can work. Or making sure you have a good way to do damage from a distance so you can run away a lot and avoid getting wrecked by both of them at the same time.
What weapon do you use? They have 0 resistance vs strike so that's highly recommended, otherwise it's a slog
You can summon D's brother for help if you're doing his quest, that gives you some breathing room too

I'm running a mainly DEX build, in fact I've been cheesing a lot with the long bow, but it's too slow and clunky to really use in this fight. I have a fair supply of throwing knives, which do a decent damage for what they are and the speed at which they go off. I've been keeping them at hand to try to finish off the first gargoyle, but have been unsuccessful at it this far.
I'm using Ornamental Straight Swords +5, which are giving me the best results and do a fair bit of damage (between 200 and 300 when I get to attack). I've tried strike weapons but they're not leveled up so I didn't get nice results and also I find most weapons in this game to be waaay too slow for my taste (I get that wielding a big sword or halberd should be slow, but in this game even the rapier and spears are slow when using light attacks. I barely use the heavy attacks at all)
From what I gather, I need to do a quest line before I can get his help, right? I'll keep it mind. Thanks!
Long range weapons like spears and halberds are useful against the gargoyles because you need long range, I've gotten good results with shields too.
