At level 80 you should be in Leyndell or beyond. And 20 VIG is unacceptable. You should be at 40 (or higher) by Leyndell. Respec by talking to Renalla.
Honestly there is no reason to grind in this game though. If your stats are not well allocated, respec accordingly.
i actually haven't even beat the guy on the bridge yet whatever area that is
unless you're farming some very optional weapons or items.
The thing about scaling stats like str/dex is that the amount of benefit you get from them is limited by the upgrade level of the gear you're using. At lower upgrade level, you get very little benefit from stacking those stats. You are far better off putting those points into vigor instead and just raising the level of your weapons with smithing stones to get more damage. After 40+ vigor, you can start raising your scaling stats above the minimum needed to use your gear.

You can always do this later on in every NG+. I did it to get perishables and buy smith stones etc etc.
I remember doing this without respec. just required upping the wep and wearing trinkets. Of course it requires you to beat the game.

Also, behind that church is a path you can drop down. It looks like you're not supposed to be there, but it's possible to make it down if you're careful, and at the bottom there's a talisman that boosts your physical defense noticeably. Just beware of the bats because they're absolutely lethal if they get up close.
I'm assuming the "guy on the bridge" is Margit, the Fell Omen.
Your stat allocation is not good, but even with 20 VIG, that fight is doable, and apart from the vigor, you are ridiculously overleveled. I think you might have missed some basic things that the game does not explain well. Maybe tell us what weapon you are using and what exactly you are doing so we can help you figure out what you are doing wrong. At this point, grinding won't help you, but figuring out the basic mechanics will.
Some things that might help, feel free to ask for explanations if you don't know the answers:
- Are you using your ashes of war (= special attacks on weapons)?
- Do you know about guard counters (= pressing heavy attack after blocking with a shield)?
- Do you maybe have heavy equip load (which is bad)? Do you know that dodge rolls have iframes (so attacks won't hurt you even if they hit during a roll if you time it right)?
- Have you upgraded your weapon?
- Are you using a spirit ash?
