If you have a secondary offensive stat like Str or Dex, best to just infuse a weapon you like into that so you can buff it. Or run it standard if you don't get enough scaling bonus.
Out of curiosity tho, what are you looking for that none of the infusable weps suit your needs?
While that is an amusing thought, it's not necessary, any infusable weapon will be perfectly functional with a humble Flame Art/Sacred infusion.
There are a number of weapons with completely unique properties like the Erdsteel Dagger, but unique does not always equate better than alternatives, or even good at all. The Carian Knight and Lazuli Glintstone Swords have the unique property of blocking while charged heavies, but it would eat all your stamina to try. The Erdsteel Dagger and Clayman's Harpoon both have innate scaling in a casting stat. The three flails have the Spinning Chain ability, which there is no ash of war for. The Golem Halberd is the only Colossal weapon (NOT sword) with a pierce damage attack, namely its Charge Forth ability, but it cannot actually accept a Charge Forth ash of war, so loses this unique property when infused.
These strange and rare qualities that you sometimes find on a weapon can get the theory juices flowing, but it's not often that it ends up as relevant or useful outside of perhaps some strange niche situation. Erdsteel Daggers are one of those.
