Have a look at the Fextralife wiki build section and pick something that takes your fancy.
I did primarily glintstone/gravity Sorcerer first run. I wanted to do a Paladin this run, and I may repeat it in playthrough 2 for the Frenzy ending, but turn it into a corrupted Paladin with Maliketh's Black Blade.
All they do is the most op generic builds
complement that with your choice of dark moon greatsword or hoarfrost stomp magic infused weapon.
Community prefer dark moon greatsword, but I feel like hoarfrost is more generally usable and you have plenty of other hard hitting options. GS feels a little slow to me and unwieldy since you always have to refresh that buff.
use Ranni's hat (makes cold sorceries better) and whatever drip you feel comfortable with.
Use graven mass talisman, erdtree talisman, alexander's shard and if you use DM GS, godfrey's icon, if not, whatever helps you save FP.
climb int up to 68, vigor to 60, mind to ~40-60 depending on level.
I've wobbled between builds for my entire playthru but this is what I settled on.
I made this without checking build videos, I just found options I liked and I complemented these by finding things to layer on top poking on the wiki.
Hoarfrost stomp will dispatch most enemies very quick, groups included, for very little FP, on bosses, Ranni's moon to lower magic resist and cause frostbite, then you can use comet on bigger boss, or the frost projectile spell on more mobile bosses. Spamming Ranni's moon works too, so does meleeing with a good magic infused weapon. DM GS is really good at damaging bosses too, even though I don't like using it outside of that context. ^^''
Ranni's moon is also a really good long range option, that thing will blow up stuff two cities away, seeks enemies, will eat up/redirect projectiles (so awesome to see arrows whirl around it), and blows up in an AOE. It's a really good spell. ;_;
That's probably a very cliche'd build tho rofl.
I can totally see you making that argument, Ranni's moon has a ♥♥♥♥♥♥♥ whole lot of utility, but damage wise, it's very FP inefficient. :c
Ranni's moon totally buffs your DM GS damage, so I suspect this applies to like, every magic weapon, if you meant not using magic at all. ^^''
My first play through was pretty much melee only with the Reduvia and the Black Knife, and it did prove to be very challenging. I also used the Black Crepus Crossbow (or whatever it's called) for range. Fun build on that first playthrough, but the amusement I have now as a sword-wielding battlemage is so much more gratifying, as 'yes...there's a spell for that.'
I just use the weapon i like and put some stats to where its beneficial.
Er is not really an RPG in the sense that there are real "builds" where putting skillspoints in the right place makes all the difference
