Latenna the Albinauric

I accidentally shot Latenna at the Wolf's Shack and she disappeared. Does this mean her quest has ended or does she show up later on near the Consecrated Snowfields?

It probably means the quest is broken, you might try the church of vows to restore her.

Church of vows should fix this it just won't bring them back from the dead, but it will change them from aggro back to friendly.

If you try to go to turtle pope to seek forgiveness and she is still missing after you might have to wait until next play-through. This isn't the worst thing, there are far better summons and i wouldn't start over because of it and just make a note to be careful next run through.

i would recommend to always use lock on first before trying anything dumb like atacking anything you see, if you cant lock on then it isnt hostile
