DS3 has less of a requirement then MH:W however I think you can, if not you can always refund it for DS3.. it's cheaper than it anyways.

Oh yeah, that's a good point. I never thought of using the refund period like that, thanks for the idea!
Well the main question was about games that offer a similar equipment/build style; the issue of being able to run it was just a side question for myself.
I have this, but I didn't stick with it very long. I've tried twice, I'm not sure why it won't click with me.
Nioh 2 is basically "Souls but with a Diablo loot system", it's pretty demanding performance-wise but it's got an insane build variety and depth since you can stack all these passive effects that alters your playstyle (examples include "refund a spell if you do enough melee damage after casting it" or "you can apply weapon buffs INSTANTLY, including in the middle of an attack animation").
I'm recommending the 2nd game for two reasons: it's got a lot better balance and enemy variety than the first game, and it's a prequel.
Earth Defense Force is a class-based game, but you've got lots of build variety through the weapon selection and adapting your loadout to the mission at hand is vital for success (at least if you play on Hard or above, which you totally should). EDF5 has the most polished gameplay but EDF4.1 has a better localization, and spin-off Iron Rain is also decent and has a character customization system, but is made by a different studio and has some annoying gameplay issues (like constantly being staggered out of animations which cancels certain attacks). (They all support co-op for up to 4 people too).
Cruelty Squad is an immersive sim / tactical assassination simulator with an unique graphical style; I sincerely promise there's a good game underneath but I understand it's hard to believe if you look at it. Every weapon handles differently and there's upgrades that RADICALLY changes the way you play; for instance it's possible to increase your jump height to the point you die from fall damage if you just do a regular jump, and one mission can be beaten in 3 seconds if you figure out the perfect angle to lob an acid grenade into the target's office window from the starting point. If you like Quake 1 / Unreal 1 and build variety, this game is practically made for you.
For games like this? Probably the 2D souls-likes.
For build variety? Try some CRPGs like Baldur's Gate, NWN, Icewind Dale. Or Deus Ex (original) and Dues Ex Invisible War (underrated, but understandable with the departure from the style of the original).

I've played most of those, they're pretty good. I'm currently looking more in the action genre like ER and the like.
The Surge (both 1 and 2) are a lot of fun. If you have or can get your hands on an Xbone/PS4 they'd be a good bet - since I guess they mightn't run on your PC.
Lords of the Fallen is apparently good, I personally didn't like it, but again it might burn out your PC heh.
Divinity original sin 2 is also great when it comes to builds if you don't mind turn based combat.
