How to make the Elden Beast fight not suck?
So I honestly think one of the reasons I've been hesitant to continue with a lot of my new character builds is because on my first playthrough, the Elden Beast was probably the least fun fight in the whole game. I was doing a colossal sword build with the Ruins Greatsword (admittedly this was before they were buffed) and couldn't even get him to half health before dying even after almost a dozen attempts. Switched to power-stanced greatswords and spammed jump attacks, did it in only 3 tries.

Are there any good tips or strategies for making this boss less of a chore to fight?

I didn't find the fight "difficult" persay, just incredibly tedious. I get what they were going for thematically, but the arena is just too large. The encounter almost feels like it was originally intended to be done on your mount.
The Elden beast fight is literally a stamina war. I had him down to 1/3 health and he did his sparkle attack that follows you, the elden ring attack followed up with 4 sword holy blade attacks after I lost track of him in quick succession. Ran out of stamina and died to the sword attacks.
I don't like the fight either. But I beat him with a slow weapon, prelate's inferno crozier. Blocking with the golden greatshield made it easier for me.
One of the worst end bosses in my opinion, not because of difficulty, but because it's just tedious.

Boost holy absorption with talismans and/or spells and bash him with Giant Crusher >:)

Agreed! First time I fought it, I had heard many people complain about the chasing and decided to just not do that. Dodge its ranged attacks, use the sword swipes to close distance (it's standing still for these), or just let it come to you.

Fighting that way, I really enjoyed the beautiful, serene vibe of the boss.

yeah, i could beat him just fine with my first build, dual colossals.
But the annoying part is just the tedium of getting into position. They should have just shrunk the arena. I get that they didn't want you to use the mount for the final battle, but it would still be pretty epic if we didn't have to run a mile everytime to get a few hits in.
Your best option is to not play as soft wants you too and just look up nuke builds and get it over with. The Wings of Astel was able to stun lock the mob and hit it hard enough you could just win by taping the weapon skill, but they might have patched it.
The most important thing is to have a way of doing a really large amount of damage in the windows you get - black flame tornado works well, and there are other options. The best opening is when it makes three melee attacks that end in a downward slam.
