In that instance you'll just get teleported into the boss room with the boss alive and grace wont be there until you kill the boss, janky, but not risking a ban.
And if you think thats risky you can always just tp to the grace closest to the boss and walk through the fog wall like normal.

AFAIK, what it does is check for changed files and their contents to ensure that no items, player abilities, and such are altered from the original values. A table mod that made changes such as opening all graces that is part of the game anyway seems unlikely to be checked for by EAC.
What is more likely is that the game might be screwed up by having access to graces that game progress would not normally allow. For instance, you might not be able to instigate a boss fight.
