So if you're running a strength build with 60+ strength and have a weapon with the "heavy" affinity, it will scale purely with strength. This can make certain weapons that may scale better with dexterity, such as katanas, curved swords, or rapiers, into strength scaling weapons. So if the weapon you're using primarily scales with dexterity and you take the "heavy" affinity off, you're damage will drop significantly.

Somber weapons cannot have their ashes replaced and are stuck with the scaling they have.

You're supposed to run all of your weapons with ashes that conform to whatever build you're using. Intelligence has "magic", Faith has "flame art" and "sacred", Arcane has "occult". Strength has "heavy" and "fire", and Dexterity has "keen" and "lightning". Builds that utilize multiple stats have "quality", "cold", "poison", and "blood".

Dunno if this answers your question, this is pretty common knowledge as affinities have existed since Dark Souls 1. There's more to be said but I think this a pretty descriptive answer that hopefully answers your question.
