Aaaah ok. Yes... They could be hard.
But actually there's no reason to fight them.
I can take any item in the area just running and going stealth.
The death bird is the only one that stands out to me as being annoying and having tricky aoe's with that white fire stuff. The castle boss trio is also pretty tough since it's 3v1 but spirit/coop summons take care of that. The lion duo at the entrance is super easy since they can't get through the front door and you can cheese them.
Though in theory you should be equipped to deal with them by that point.
Also, Ansel with his RNG-teleport-one-shot-grab, but he's manageable.
With very few exceptions most open world games are this way.
Not a comment about the game, but BOTW has only 27 variations of enemies, which come with different weapons, and coloring depending on where you find them.
I can't think of many souls likes, or open world which don't do something similar. Elden Ring has 112 unique enemies before color, and weapon variations, I think they did quite well.
(Not counting, the few enemies who have boss variations, for a battle, or evergaol.)
While DS3, only had 90, not counting unique invaders.
I mean Skyrim, essentially has less than 30 variations of enemies, which come in different skins, colors, weapons, and what not.
