His grab attack can still one shot you with 40 vigor, but the rest ought to be a whole lot easier.
Ranged attacks work quite well against Astel, but you can melee him too, specially if you get underneath him, but don't stay there too long or stay attentive to his "seismeic waves"
-I have 20 vigor and the boss' meteor strike attack is one-shotting me through Radahn armor. It doesn't matter how I dodge or if I use a shield, one meteor homes right for me and there is nothing I am able to do for it.
When he prepares his meteor rain, just run around him, in a straight line perpendicular to the meteors. Its what i do and I'm enver touched.
You want at least 40 for most of late game, and up to 50-60 to deal with endgame bosses. No wonder you get one shot. I'm impressed that you got this far with only 20 Vigor, to be perfectly honest.
Ha....and with 85! (NG7 and beyond). And we are talking about the Ranni quest Astel, the Yelough Anix one if he manages to grab you deletes your character and uninstalls Elden RIng.
But as i said before, OP did a decent job getting there by just dodging and pumping enough damage to end the fights fast but after Morgot (and the guy after the first Astel) you are rogered if you walk around with 20 vigor.
By my count I have cleared most of the bosses with 10-20 vigor. I have to at least be around the 50% mark of dead bosses (though probably higher)
I never knew it was low because I always assumed bosses have one-hit-kill guaranteed attacks as a soft timer on the fight. So instead of full armor+vigor I've been investing into damage and mobility.
But now? Now I know I've been playing on a handicap and STILL winning. So thanks, by calling me trash for not having 40 Vigor you've actually given me an ego boost. I am a badass that can kill the worst things this world has to offer without taking as many hits as you.
Ok....why you had to ruin everything? and i was the only one typing you just played your way leveling up whatever you wanted, now i even have my doubts about this whole thread being a not that humble brag expecting "hostile reactions".
But im case i was right about you.....the first part of the game ends after the capital pretty much. You certainly died a lot but more or else everything was reasonable to give you chances to survive more than one hit, even being the glass cannon you claim to be.
Now after the capital and specially if you are using scorpions/soreseals everything hits like trucks.
There are 3 gingers in your way and every single one of them can oneshot you with their most basic and quicker attack....TLDR just level vigor a bit more to make your experience more enjoyable. 35 or 40, pick one.
