To dodge at close range, easyest method is to do same as Let Me Solo Her. Watch on YouTube, but it goes as going sideways and roll into her right at the startup. Be at light load. There's no point otherwise at this fight.
The first spin is the most dangerous. Run away as fast as ou can from her as she does it, and you can jump away during the attack to create slightly more distance. Worst case scenario, you can try to roll into the attack to dodge a few hits, but you won't be able to dodge everything so I don't recommend doing that.
There are 2 options or the 2nd spin. The first one is to dodge into her at the right time, which can allow to I-frame every single slash (unlike the first spin). The timing is a bit thight but manageable. Alternatively, if there is enough distance between you and her after the first spin, you can just keep running away and she'll miss her entire second spin.
For the 3rd spin, IMMEDIATLY roll into Malenia as she finishes her second spin. This will make her miss about 90% of the 3rd spin. I say 90% because depending on you positionning, you might need to dodge backwards one last time to fully dodge the combo. The 3rd spin is the one part of the combo that you just can't run away from, though, so don't try that.
There are many other methods to dodge it, or just outright cancel it, but that's the one I used against Malenia when I killed her for the first time a few days ago. It works quite well IMO, only threat is when she starts it while you're too close, in that case your best hope is to try and mitigate the damage, and heal immediatly after.

I don't know if patches made it possible to avoid the first volley, but back when i played the game there was only two options, you either block it (preferably with barricade), or you use something like bloodhound's steps.
The only other trick you can use is to knock her off of it with frost pots, which you can only do up to three times due to the increase in resistance that follows the use of status effects. This is tricky of course since it's hard to guess what she is about to do every time she jumps in the air and you have to be quick but it's doable.
If you just find yourself unable to prepare for it by keeping some distance from her at all times i'd just block it. It sucks that you give her free heals but it's better than nothing and it's at least pretty safe. Block the first, then dodge the other two attacks.
Pick up a medium shield with 100 physical block.
Put barricade ashes of war on it.
Buy smithing stones to upgrade it a bit (+15 or +18).
When she starts waterfowl at close range, I swap my left hand to shield then hold block and activate the ashes.
Block the entire first phase of the attack.
Then, the second and third attacks can just be rolled straight through going towards her as she flies past you.
That's it, works like a charm and only takes 10 strength. If she is far enough away from you when she starts, you don't even need the shield - just run away a bit so the first attack doesn't reach you and then roll through the rest.

Roll through the second part. A bit unnerving to roll towards death, but trust the i-frames.
Roll sideways for the third part. I almost always roll to my right.
Don't forget about the latent fourth part when it appears to be done. Just let it play out and punish or use a ranged attack while she's just standing there.
Also, you'll get a feel for when she's about to do Waterfowl. Typically around 66% and 33% health she'll slow down and start walking toward you. She's baiting you to attack so she can do Waterfowl in your face. Use a throwing knife from a good distance to forcefully trigger Waterfowl and make the first part avoidable by running.
