If you're really stuck on it, I'd recommend running faith and spamming Pest Threads. Its pure physical damage and you can shred a ton of EB's health at the start if you run behind it while its using the fire breath attack
Aside from that, you can avoid a lot of its attacks by clinging to its sides. That can be a bit frustrating to do since it has a habit of suddenly moving to the other side of the battlefield, but yeah
