dude margit is easy you can go to most of the map except maybe 1/4 of the map so look around find a nice weapon and fight him again. You can also parry every attack with the staff he does

Get the Bloodhound's Fang, that's very good against Margit.

Upgrade whatever weapons you are using if you want more damage.

This. The weapon is a beast in general on early levels.

Also, we need a "Everything possible before Margit" video.

General rule: spend more time with exploring.
You should explore the whole Limgrave and the area to the south ( Weeping Penisula), before you continue to the Castle Stormveil.
You can find lot of useful stuff in Limgrave, weapons, merchants, cookbooks, crafting recipes, Ashes of War, upgrade mats, NPC quests, and so on.
Find the AoW "Golden Vow" and use it on a dagger. Cast it before you enter a boss fight, that will increase your damage.
Get also some consumables to buff your weapon, Blood Grease is a good one for your Bloodhound Fang.

If you go to Castle Mourne (as far south as you can go in Limgrave), find the commander and do his quest (which involves beating the area's boss) he'll give you a halberd that's already upgraded to +8. (Or you can be mean and just kill him for it)

Elden Ring like every souls game has a slow curve that upswings REALLY hard then soft caps, then soft caps again, then soft caps again. Margit by all technicality i think is a SL 20 boss. In my first run through of the game way back when it first came out i went at him at SL like 6? With an unupgraded axe doing 50 damage a swing - What saved me was getting the Jellyfish summons from that lady and getting it to poison him - throw in a couple hits to draw his attention away from it and let it build that poison - run around the arena till he dies and you might have to throw in a swing or two to finish him off, but yeah overral he's pretty easy but is a early game nub stomper.

You can't go wrong with the Broadsword sold by the merchant near the Coastal Cave.

Its near the very beginning of limgrave just down by the beach.

He also sells the Club which is a good starting Strike(Blunt) weapon to damage/shatter "Hardened" enemies when 2 handed.(You'll regret not having a Strike weapon as some bosses take up to 90% less damage from non Strike damage)

Although you might want to give the Broadsword a better ash of war as its base weapon art is rather terrible.

Lordsworn's greatsword from the gatefront ruins chest, Bloodhound's fang from the Evergaol at the south end of Limgrave, by the bridge to the weeping Peninsula, the Great Epee from the enemy camp by the southgoing road in Limgrave (west of the mistwood). All 3 are strong greatswords, with that much Strength you should even be able to 1-hand them with a shield if you need (you'll want one with 100 physical defence).

For Shields you can find a heater shield in the Stormhill enemy camp or somewhere near the Minor Erdtree in the Weeping Peninsula, you can also farm brass shields from the soldiers that carry them (again the Gatefront ruins is a good place to find a bunch of them).

In general, you'll find weapons galore by exploring Limgrave and the Weeping Peninsula to the south. Exploring the Weeping Peninsula can get you a bunch of improvements to your flasks as well, you're probably even gonna need a bunch of extra vigor just to keep up with the upgrades.
Go get the Bloodhound's Fang. It is, in my highly subjective opinion, the best sword in the game. It's also available very early on and has pretty low stat requirements given it's immense power!
