I mean it wasn't a bad game but DS2's world design was far below the standard set by the rest of the Souls games, likely because Miyazaki (the creator) was busy working on Bloodborne with Sony at the same time Dark Souls 2 was under development.

DS1 might be the best world/level design ever, so everything after it seems worse to me.
Soul Memory and level design hurt DS2.
Elden Ring loses major points for the open world gimmick that's been done to death by everyone
You have a point about Elden Ring's lack of that classic Souls world/level design, but I still think it's a huge step in the right direction. It's the first truly 'open-world' game FromSoftware has made, so it'll only get better from here.
But to be fair, all Souls games are technically 'open-world', just on a much smaller scale than Elden Ring, so it makes sense that it would lose some of that connected feeling in the world design.
I think what sets Elden Ring back the most is that it has too much empty open space that separates and divides the world map, even with a horse. If they add a gliding mechanic like the one in Zelda: Breath of the Wild, I think the world map would feel far more connected.
