That said, the PVP is damn good.
It's a mess on almost every level. Technical (I crash about once every 30ish multiplayer matches, a sixth of your opponents are so laggy they skip animations), balance (both in and between weapon classes), design (oh hey look, you can infinitely summon other players! and spawn 2.7 miles away from the host! and-)
It can be fun, but you have to put up with a helluva lot to get there.
Pve is great, and lets you make a build you use for pvp.
DS1's pvp is the worst simply because of the broken backstab mechanic. just because of that. otherwise it was fun.
Heavy armour is more useful, poise is more useful and doesn't merely exist during hyper armour frames, and there is much more viability when it comes to build variety in PvP. Dark Souls II has been the only Soulsborne title where I frequently saw 71%+ equipment load builds in PvP due to hit trading with heavy armour and high poise being just as viable of an option as attaining builds that possess medium to low equipment loads.
Again, when everything is playing out properly, I would say that Dark Souls II is the best PvP title. Dark Souls III and Elden Ring are good games for PvP as well, though Elden Ring currently lacks PvP modes outside of the colosseum and basic invasions. Dark Souls II and Dark Souls III possess the most PvP features and covenants, though I personally believe that Dark Souls III suffers from a poor poise system and weak builds that exceed a 70% equipment load. Unlike Dark Souls II, juggernaut-style builds in Dark Souls III and Elden Ring will not make use of poise and stagger resistance unless they are making use of weapons that possess hyper armour frames.
Lastly, Dark Souls III and Elden Ring gain points for allowing players to respec their characters and change their appearance without having to create an entirely new character. This makes it easy and convenient for players to try new builds without having to play through the game again.
In prior games the rules were simpler, and everyone had to abide by them. In Elden Ring it is a free for all.
DS3 solved it, that's the truth.
DS2 PvP is ok, but game is ugly as hell and animation is sub-PS1 tier. Impossible to play, game got old too fast.
