Once you bother to learn sekiro's mechanics it gets easier and better
But I digress. ER was to me a bit more of a slog, but overall easier. The two are pretty different in gameplay though, I might add. Sekiro seems more "formulaic", whereas ER lets you think outside the box a little more. GL.
Meanwhile Elden Ring have so many ways to play many different build and many different paths you could go So with that reason it easier for many people.
If you go melee only, (esp. with a bigger weapon), you might have a hard time, though.
The easier Sekiro gets is using all available tools, killing all bosses and mini bosses, upgrading your vitality and attack and to keep Kuro charm while not ringing the bell.
In comparison with ER if you use every single tool available (including spirit summons, mimic or summoning other players to help yuo or defeat the boss for you) ER is vastly easier.
The harder Sekiro gets is not upgrading anything and using only deflect, jump, dash and attack and not using any prostetic or any other tool and if you fail deflect/jump/dash while ringing the bell and giving Kuro charm back, you may still not die instantly and you can still die once or more.
In comparison with ER if you go only melee attack with dodge and attack, start as wretched and dont level up also going naked ER is vastly harder and more demanding and punishing with your mistakes and some areas may even be off from your reach due to your tools, gear and health limitations such as rot locations.

Sekiros difficulty is unmatched in my opinion, it'd be closer to a hardcore rhythm game or something, whilst this is more the usual/typical/generic boss fight and combat mechanics where you're looking for openings and then dodging the rest
