I have a slightly worse gpu (1660) and slightly better cpu (9600k) and it's playable enough for me at 1080p. With a mix of mid-high settings, in some open areas FPS might drop below 60 or with a lot of particle effects, but for me at least is not that much of an issue. YMMV

I7 7700k, 16 RAM, GTX 1060 6GB and can play it also with mid-high settings, but capped at 45fps not to transform my gpu in a frying pan. Don't know if this will serve as comparison, but who knows.

put everything at high, effects and grass to medium and you'll be good, in case you need more frames drop the shadows to medium aswell

You won't know until you try. CPU is pretty good but lack of hyperthreading is a drawback and the game is very demanding on the CPU. It is the K model though so the turbo boost will help to make up for that.

Just play till you hit the open world were that tree knight is then if you runs fine your good That's not even 20mins into the game enough time to get a refund
and there's a good couple mods that change things about the game that make the game look worse but can double your fps downside you can't play online but there's the coop mod that let's you play with friends so yea you'll be perfectly fine at 1080p for shere plus there's a program named Lossless Scaling that can make your game play at 1080p and performance of 1080p but look very close to 1440P or what ever your desktop resolution is it's a cheap 5$ program

When I first bought the game, I was using a 1070ti, with otherwise similar specs. Game ran great for me at 1080 60, as long as I didn't push everything to max.
