Also, Rivers is still viable.
Rogue - I fought a guy on PVP that mained daggers with status build ups and that one bow with triple shots that you can attune. It's a nightmare to fight and I can see some utility in bosses. Just proc three statuses (freezing pot for instant freeze / poison / rot). Throw in some bleed if you want since you were a bleed player anyway. Throw in a parry on one of your daggers if you want for more flex. This will probably be my next build since I never went arcane.
Alternatively and if you still have the materials to do the final upgrades:
Carian Knight. Sword spells (slasher, piercer, greatsword, adula blade) and Loretta bow spells. It's a mage but mostly fights in melee.
Paladins - mostly STR, faith minimum to cast buffs, parry on medium shields or go greatshields (not to shield poke but to use shield bash/crash which is situational but interrupts a lot of enemy moveset, including, ironically, against ROB spammers)
STR unga bungga - it gets boring quick (since most colossal weapons have these slow repetitive movesets) but with its high damage and staggering output, holding two big weapons just works.
Or Cross-Naginata is also very good, preferable a pair or with another good spear.
