Do Great Shields have some specific advantages over Medium Shields?
Like a lot of the higher end Great Shields are obviously superior on Guard Boost and defensive stats.

But I was looking at the Golden Beast Crest Shield.
It weighs 12.5 and seems to cap out at 67 Guard Boost at +25.

Compared to the Brass Shield:
Weighs only 7.0 and has 69 Guard Boost at +25.

Is there any reason one might choose the Golden Beast Crest Shield over the Brass Shield?

Greatshields have better deflection than medium shields. For example, Banished Knights can completely drain your stamina if you try to block their combos with a medium shield. With a greatshield, all of their non-charged attacks will bounce off and leave them vulnerable for a guard counter.

I think thats only if you one-hand the weapon.

Note that the Brass Shield is an extreme outlier; it's either the best-in-class medium shield or very close to it. A superior comparison might be to, say, Fingerprint, where both weapons being very strong for their class will better highlight the advantages and disadvantages of the upgrade.

Mm, not sure if you mean you attacking a greatshield or if you are blocking a one-handed attack with a greatshield. The former is true for PvE when you are the attacker. But given the TC is comparing shields and guard boost, I assume this point is not relevant to their question.

I agree that the latter is a good rule of thumb, but isn't exhaustive. For example, Banished Knights wielding a halberd are technically always two-handing the weapon. Yet, they are susceptible to the greatshield deflection as the other variants.
