You can with cheat engine I believe Zulie the Witch made a script for cheat engine to reset bosses. I haven't tried it and you would need to play offline without EAC to do it though

- do parallel universe exist ?
- do we live in a simulation ?
- was there something before space and time ?
- what happen before the big bang happend ?
- why does Fromsoft hate boss rush and horde modes ?
- why does Fromsoft hate updating their engine ?
- will Vamirez ever realize that this game has performance issues ?

Best way is to try to coop (while selecting "near") next to the boss and help others beating it.

Outside of that, you will need to savescum or use CE like others have pointed.
