If you want faster attacking weapons, try a different weapon type, like Straight Swords or Daggers. Do keep in mind, though, that the lighter weapons deal less Poise damage, and thus have a much harder time breaking an enemy's stance.
My suggestion since you're early in to the game would be to grab a shield and learn how to parry parry parry. Doing so will grant you the window of opportunity you want.
Bonus: you can't change a weapon's attack speed. If you want faster attacks, you have to use a different weapon.
Use Counter, its a mechanic, you block an attack and immediately follow up with a Heavy attack, do it enough times and you will break their stance, allowing a riposte.
You can use something like Barricade Shield to greatly increase the strat since it will make their attacks bounce off, leaving them vulnerable.
The Greatshield Spear-pokers and Greatbow spammers sniping you from 30 miles away are the best.
Then there's a few that spam Honed Bolt at you endlessly.
Yeah, gotta love it when you are trying to chug some jug, only to get electrocuted for 50% of your max hp because some ♥♥♥♥ 2 blocks away bonked the floor with the butt of their spear. GG.

backstabs are often very easy to perform with these kinda enemies once you understand how they work. all it takes is often one well timed roll dodge for positioning or for some just lock on straving is even enough while guarded. having the experience from the knight of ds3 really helps here as they are mostly just reused patterns with some minor modification of these.
also making sure you fight these solo is a big deal. when facing multiple enemies make sure you either pull them solo with a bow or ambush the weaker add first so you have a solo situation. going for backstabs or charged attacks can be very frustrating with multiple enemies.
and ofc there always is the option of a parry but while this is perfectly doable and valid for these the risk reward balance is not fully there with these as they can be dealt with easier without parry. but for those that already know their attack patterns well this is an valid option.
You do not speed up your own melee swings. Not how it work.
The forced one, run past him and grab the key. Even if you get disemboweled you get to keep the key and don't have to bother with him,
Halberd one right before the rampart grace site, wait till he turns away from stairs and RUN up the stairs to touch grace. After that, you can use the Rampart grace to spar with him if you like, or just continue the castle.
