Physical resistance talismans are really good, and talismans that improve resistance to for example fire resistance can give you some extra breathing room against fire attacks, use to not get 1 shot by them.
godricks rune (the first great rune) gives you +5 in ever stat, meaning 5 more vigor and some heavier armor possible. and later on with morgott you can get a 25% hp buff as an example
with 60 vigor and morgotts rune you have 2500hp and with hp talisman you even have 2700. my best guess is you run around with 1200-1400 right now
also while 80 is fine in the capital you could easily be 20-40 lvl higher. have you done mt gelmir/volcano manor ? if not go back. its "meant" to be done before capital
everything said is very subjective
i have now 100% the game 3 times without any grind or xp exploit and all chars are 170-180 at the end. reaching 150 is very much doable even when only doing around 80%
also very underrated if you ask me is the physical flask heal over time + with 50% heal. i use this as the first heal for most bossesl and for the rest of the fight you have a nice hot. this helps more than people think. ofc depending on the boss/situation you may have to use some other combinations but as a standart is set it to hot + 50% heal and use it always as the first heal before normal flask. also helpful for any poison or scarlet rot situation even though scarlet rot should always be cleansed immediatly anyways. but it helps giving you some time to react.

this helps to make sure you dont miss out huge parts of the game where you may get like 10 or more lvls. that route is ofc only an option and does not have to be followed but to make sure you didnt miss out anywhere big time its nice
Apart from that keep an eye on your damage reduction stats - this is a percentage of damage from the various types that is deducted from hits. If you are a STR build in any way, additional STR points will give a little bit more of defense. With the soreseal talismans be careful - weigh the pros and cons (taking more dmg) carefully and get rid of them later in the game at the latest. Would be my suggestions.
This could be a major factor if you are using either soreseal - the soreseals are really good in the early game, when enemies dont have much damage to multiply on you, but in the later stages enemies have their damage upped, which means the damage increase from the soreseal will impact you alot more
