I use serpent hunter with the intent to just practice and improve, because that weapon is balanced but still good, my win-rate with that is fairly high, but I still lose to extreme meta matchups, or genuinely better players.
The ultra greatsword is basically an S tier weapon, and it's my personal favorite, yet I don't use it much anymore because of how easy it is to win with it, due to how strong it is.
Having the game the way it is means that even if you're slightly better than your opponent, they'll still win if they're using a top-tier weapon if you aren't, it forces you to be SIGNIFICANTLY more skilled to beat them, it's still possible, but it makes skill less of a requirement.
When I use dual vykes I don't even have to outplay my opponent, just spam crouch L1s a few times > proc madness > GG, it's why I got blocked by quite a few people for using them.
Going to play a game I just got with a friend, maybe later I can show you how busted some setups are if you want, fight against my bleed build and just observe how I barely have to do anything to win - not because of any skill I have, just simply because I'm using strong weapons.
