Some folks here have stated that ER is like having BB or Sekiro bosses but with (pretty much) DS combat. I largely agree with this sentiment.

A good baseline would be at least RL30 with a +3 weapon, and around 8 flask uses at +4. I'd recommend putting points into VGR to at least 20, preferably 30 if you're struggling. I'd also recommend speaking to the girl in the red hood who is sitting in a shack near the trail to Margit. She will give you a Spirit Ash that is very tanky, and is a much better companion than the NPC summon. Summoning an NPC increases the bosses HP, whereas Spirit Ashes don't.
Apart from that, just practice, you will get better!
