The only accessibility they should have, and do have, is for those with disabilities.
That's kind of the point of the genre. Some people just have to do more to adapt than others.
Alternatively, I can offer a solution for PC players with the use of mods. One of the most downloaded mods on NexusMods is in fact an Easy Mode mod. Perhaps this will allow those with impairments a better chance at overcoming their disabilities for the sake of experiencing Elden Ring even to a small degree.
However, I encourage you and others to try it for what it is, and to persevere. Fight for your humanity, your sense of purpose and drive that keeps you human, so that despite the struggles and hopelessness of the world your existence will not fade into meaninglessness - so that you may not go hollow.
There are a lot of people who get caught up in the hype of a game, and want to partake in it, but don't actually have the skill, the patience, or the time to play through it and beat it. I would wager 99% of people who downloaded that easy mode mod aren't actually physically impaired or disabled.
As to your last point, let us not forget the DS1 lore reason for all of the Hollows you came across: they were people who gave up. They were unable to adapt, they were unable to overcome the obstacles in their way, and so they gave up. The entire point of the game is for you to keep your head up and march forward; to persevere against the odds, no matter how difficult the enemy.
And yet proposing an easy mode, and utilizing mods for that purpose is no different than stating, "I can't do this. I give up." You've already gone hollow.
Like someone else said, accessibility options should exist for actual physical impairments. If you're color blind, or need subtitles or something, absolutely. Features to alleviate those issues should exist. If you're just bad at the game, that isn't enough justification for an easy mode. If you want to take part in the hype, and feel like you belong to something, that isn't a good enough justification, either.
People just need to play the game, and frankly, get good, but unironically. If the challenge is too much, that's fine. There are plenty of games out there. Don't demand a core aspect of the genre change so that you can be included, though. That's absurd.

From soft always has some ridiculous hard enemies in the beginning, you are not supposed to beat yet unless your are super experienced.
