What's the more advanced/harder area, Altus Plateau or Caelid?
Just wondering what area I should do first

Both are dirt easy. Literally doesn't matter, but there is the rune talisman in caelid if you need a bump in leveling

It depends on which part of Caelid... The Dragonbarrow is considered more advanced than Altus Plateu, while South Caelid is more forgiving than it's northern counterpart ("easier" would be inappropriate, it's still significantly harder than most of Liurnia) and roughly equivalent to Altus Plateau

+1 this, if you are just exploring Caelid is a place to come back to a few times.

Caelid (south, north is more like late game) seemed a bit harder to me. Screw those damn birds.

The way the game is designed I think you're meant to do at least part of Caelid because of Radahn. There are quests that start there which you should get before you go to Altus and of course you should kill Radahn before going very far north of Stormveil Castle. You didn't say if you'd killed Radahn yet. You can run away from the giant dogs and crows.

Actually one of the ways to unlock Radahn Festival is to reach Altus Plateau and activating the site of grace; the others involve Ranni's questline, so one is supposed to reach Liurnia at the very least before fighting him. He is considered more advanced than the Altus Plateau, as far as the ideal progression is concerned
