I use a PS4 controller but the buttonmapping (triggers, face buttons, joysticks, d-pad) are exactly the same for Xbox controllers.
Being able to dodge and heavy attack and use skills with only one button press is much simpler than using two at the same time.
I played Dark Souls: Remastered with keyboard and mouse on one of my characters. It is doable and has some minor advantages, but is mostly worse. Elden Ring I think is even worse with keyboard & mouse because there are extra things to do.
FromSoft games are meant to be played with a controller, similar to racing games. I recommend that you buy an Xbox one and not a PlayStation one so that you can see on-screen prompts properly.
