Stackable buffs?
Ive noticed when buffing bedore a boss that some buffs stack, and some dont. So how does this work? Which once stack and which dont? (Example, does golden vow stack with flame grant me strength?) Can i use spell buffs and then eat a prawn and have them stack?

There are different categories of buffs, and you can only have one from each category. You can look them up on a wiki.

Protection spells like divine resistance, flame protect me, and black flame protection don't stack, and that category also includes consumables like dried liver and prawn/crab. Flame grant me strength is also part of that category "body buff", but golden vow is not and would stack.

Golden Vow and Flame Grant me Strength stack.
Eating a prawn, as far I know, overwrites Flame as they do, in part, the same buff.

are physic flasks seperate buffs? or will they override certain spells/consumables?

Some of them do. For example, the Crimsonburst Crystal Tear provides health regen, so it can't be used with incantations like Bestial Vitality that do the same thing.

Take a look at the Fextralife page suggested by Fineous. It describes everything related to your questions.

With regards to Golden Vow and Flame Grant Me Strength, the easiest way to tell if they stack, would be to just look at the damage you inflict on an enemy with a very large health bar, when you apply those buffs in succession, versus when you otherwise don't apply them at all. The Redmane Knight you find, headed southwest, from the Smoldering Wall site of grace is a good candidate to test this out on, once you kill the other 3 soldiers that accompany him. Without buffs, it takes me 3 strikes from my dual-wielded halberds to kill him. With buffs, it only takes me 2 strikes.

What about my buffable stacks?
Be aware that some buffs essentially overwrite others you may have triggered, and in some instances you may need to cast them in a particular order if they're capable of stacking. If you're uncertain, my method is to check your base weapon damage/resistances in the status menu, then check it after casting your buffs to test them and check for any increases/decreases, but to get a better idea I'd check the individual increases, then check the stats after casting both to see if the values add up or not.

Though I'm uncertain if the overwriting thing is present in ER, but it was in DS3 if you used Oath of Sunlight from the Sunlight SS and try casting something like Deep Protection. I can't remember off the top of my head but you definitely have to cast one before the other for them both to stay applied, so just keep that in mind if casting a buff seemingly makes another disappear.

Most of the incantation buffs I use can be cast in any order though. In my personal experience, it's usually an issue when attempting to stack weapon art, or food item buffs with an incantation/sorcery buff, or using multiple buffs that affect the same stats similarly

EDIT: consuming boiled crab, and casting the Golden Vow buff will overwrite the buff received from the crab. So it is present in ER
