She's vulnerable to bleed and decently susceptible to fire (fire grease is easy to craft early). Apply grease as she falls down and just pummel away. Getting her first phase done quickly isn't hard at all.
For second phase, if you really struggle, roll away from her first casting (it's always the same spell) and use Demihuman ashes, if you have it. 5 creatures pummeling at her should be enough to keep her perma-staggered, more or less, as she is very susceptible to it and the majority of her attacks can be interrupted.
You can get a talisman to buff your magic resistance and mebbe level up some more your Vig from a cave in the weeping peninsula (north side, iirc)
Also, level vigor to at least 30, preferably 40. Vigor scaling is not linear and every point in vigor gets you more HP than the last point up to level 40. Vigor level 10 to 20 gets you 238 more HP, 20 to 30 gets you 342 more HP, 30 to 40 gets you 456 more HP.

She is easier than normal mobs.

To each their own. Everyone's experience is different, so you gotta figure out what works for you.
I fought Rennala with 12 vigor. I also neglected vigor in order to boost str + end to wield the weapons I wanted to.
If you have faith, are you casting magic resistance? Are you wearing magic resisting accessories? That's what I had to do given my low vigor.
While phase 1 is pretty easy (find the scholar with a "bubble" around her, kill her, repeat once or twice then punish Rennala who just crashed to the floor), I'd advise to use spirit ashes to help you in phase 2 (in phase one they'd just be confused by the many enemies to focus on). If you have one, prefer spirits that summon only one mob that can take a proper beating. With multiple mobs (like wolves or semi-humans) Rennala would focus on too many things, making windows of opportunity harder to notice. If you can, use strength weapons that hit hard, as she's easily staggered (jump attack is your friend). If you play dexterity, quick strikes and bleeding works well. Defense-wise, there's a bellfry in Liurnia that can take you to an end-game place (well, outside of it, but with a great view), and there you can find a talisman that gives protection against non-physical damage, which would help against Rennala.
As for the trip back to her, it's a bit long, yes, but you're never really in danger, and I think this is the one place where it's okay not to have a Marika statue. I think she hates Marika, who took her husband away from her, hence why there are no statue of Marika near her. A little frustrating, sure, but I think it's a nice detail that blends well with the lore.

2nd phase, let her cast her spell, go in and hit her once or twice, then get out. Keep moving, until there a small interval after spell casts. Repeat until dead. Ignore summons.
