Swapping in a heavy crit weapon after a poise break is one of the many things that people mean when they say 'get gud'.
- you can 1st get a few hits in and then use the crit - that way you get more damage in
- you also get a free time during their recovery to heal or whatnot
Guess they just observed how previously some parrialbe bosses were completely destroyed by crits and decided to change that.
Imagine Malenia who can be riposted after each parry for the old-style 2-3K damage? Too brutal.
If you want to maximize critical hits, look for weapons with critical multiplier. This is not great as most weapon have 100% multiplier, few have 110% and only very few has 140%, which means these high crit weapons might not fit into your build.
You can always use Dagger Talisman to increase your critical hits but I think there are better Talismans.
crit do feel inferior to casting a spell or an ashe of war, considering that some of those things can reach 10k +
