Broken resolution
So to explain, I used to play this game in borderless since I like to swap to discord or chrome, but seems that after a specific patch, running the game in borderless causes the loading screen to not load and the game to stay on white screen, which then leads to it not responding and crashing. I figured this out by using GeForce to change the settings from borderless to full screen or windowed.

In windowed it has no problem starting the game on proper resolution and playing, except that windows will force taskbar over the game which isn't ideal, but I'd rather play the game on fullscreen than windowed anyways.

When the game starts on full screen though is when issues start occuring. The game will start at the lowest resolution and stays in the top corner, which am fairly certain is cause it fails to adjust the resolution of your PC to put itself over the whole screen. I checked the settings and even though GeForce was meant to set it to the max screen res, it stays on 800x600. I quit the game and restart multiple times to see if that fixes anything, and one time the game randomly adjusted itself to my screen resolution over the one that was set for it, which was weird cause the settings still showed 800x600. I know it actually adjusted because when I tabbed out of the game, it didn't look like the screen resolution had changed, as it becomes apparent because windows starts changing it back to your default when you exit a game or tab out (except this is windows so exceptions are bound to happen on that one). Loading in the graphics and everything were still the same as I remember them so it couldn't be still at 800x600.

Now here is the kicker, if I try to change the resultion from from fullscreen/windowed (can't run the game on borderless even if I set it back through GeForce), or attempt to adjust the resolution from the preset one and this time in the system menu in the game itself, it stops responding and crashes shortly after. Basically just clicking on the setting completely breaks the game somehow and it doesn't seem to matter if it's on windowed or full screen, it'll happen anyways. Every other setting works, it's just these 2 it would seem.

Anyone else has this issue or knows how to fix it? It's been 2 weeks as I tried waiting on a new patch to see if that fixes it, but alas, I am here now.

To anyone having this issue, Open NVIDIA appn GRAPHICS, Elden Ring, the spot where it says "Checkmark" Game is being optimized with a drop down menu, swap the default resolution to 1920x1080 or whatever you normally use. Spent a whole hour looking this up.
