Smough and orenstein I dont think were injured or super old as far as "prime" goes.
Honestly the the theme is "old guys bin in power now our turn" so it fits thematically.
And Rannala's second phase is literally an illusion of her prime.

1. Godrick, technically his prime would be the second phase of the fight, but close enough~
2. Rennala(controlled by Ranni?), she may be a little broken but the second phase of the fight is not impacted by that.
3. Morgot. hasn't had anything to actually weaken him, he's just been living his life and hunting tarnished.
4. Rykard/God Devouring Serpent. another like Godrick that's been biding his time and accumulating power.
5. I'm just going to make this one a compound of monsters like the Fully Grown FallingStar Beast and Ancient Dragons. they might not be shard bearers but they're not past their prime either~
full disclosure: I probably could come up with better stuff if I'd finished the game yet, so I can't speak for bosses like Mohg or Malkieth.

rykard turn himself into snake monster, not his former selves.
Rennala may be an illusion in story, but in terms of mechanics it's literally just a fight with her at her strongest. it's straight-up what you're asking for.
Rykard made himself more powerful buy becoming a snake monster, a fight with the former Rykard would be dissappointing because he'd be significantly weaker seeing as the whole point of becoming the snake beast was to gain power.
We are fighting dragons, demi gods and full on bloody gods as a mere mortal!
Though, I guess the majority of the dragons are not weakened, same for alot of optional bosses seem to be in top fightimg form.
Cruicibal knights, Loretta, dragons, statues, the evergaols 'inhabitants', commander what's his name, the red wolf, the ancestral spirits and the beast clergyman / malketh I guess along with the tree sentinels do not seem to be off their game.
Mohg, Gideon, Godfrey /loux all seem to be at full strength, snajey boy does not seem to be weakened either, though I guess we get an optional super weapon to help out there.
So, yeah I guess a bunch of the enemies are in good condition, but those that are practically gods are weakened giving us a chance to beat them.
