in DS3 you could parry running and rolling attacks, im guessing the same applies to running rolling and sneaking attacks in this game

Not sure, I remember in DS3 you could not parry colossal weapons used two-handed.

Most colossal weapons are not parriable in elden ring when two handed. Single handed yes.

You can't parry any attack of 2 handed colossal weapons. Also can't parry charged attacks from greatswords/ greataxes or any kind of jumping attack.

Yes every jump attack is unparriable even straight swords. Not sure about dual wield.

Dual wielding is counted as single handing, so yes it’s parriable.

You can parry greatsword class weapons e.g claymore
but not 2 handed collosal weapons e.g zweihander

Most weapon arts can also be parried so you may be able to parry a 2 handed colosal weapon if you parry its wepaon art that can be parried but have not seen any confirmation
