There is no indicator as to what I can interrupt and what not. Sure, the attacks where she has a wind up, that's obvious, but all her other attacks are sometimes stagger able, sometimes not. It feels random and I'm always scared to attack.
I used halberd running attacks to get safe distanced pokes on her, but eventually I got comfortable doing regular attacks on her until I saw the dodge or the sweep kick.

I usually dodge it doing the first method in the video, it's pretty consistent once you know the dodge timing and provided you start running soon as you see the telegraph of her up in the air.
I feel like now I play as she wants me to.
The first is the portion that I can't consistently escape. If I go in for an attack as she starts it, I'm screwed. If I'm backing away, I'm fine. She wasn't consistent in when she did it either. Sometimes she would do it as soon as possible and other times she would wait until more than half her health was gone. It is a rough fight.
I just beat her duel wielding her weapon after about 8 hours of trying in ng+.
