Even upwards of 60 most mobs will still interrupt you from my experience.
Also it would seem some mobs straight up ignore your poise or do so much "poise damage" that it's the same thing in practice. Dogs are an example.
Now with that said while having high poise does make you immune to small things here and there is honestly isn't worth it and it is better to just fashion souls. The only two poise armors worth anything is Lionel and bullgoat and both are ridiculously heavy and require high endurance to wear. So unless you want like 70 endurance to get a medium load, it is better to just stick with what looks cool.
I use veterans. The caps are sub50/50/100 50 and + buys you 1 hit 100 and + buys you 2 before staggered.
Veterans has the best all around stats or at least the most considered S rank.
The thing is if your not 100 and or higher your gaining nothing over 50.
I don't think it effects dmg you take just stagger/interupt from where i got the info i just know it was explained just like lvl caps. sub 50/ 50 and up / 100 and up.
As far as dmg resistance goes I've stacked a bunch of crap and there seems to be diminishing returns....I've had all defences 50%+ and I still appear to take same dmg as 40's range for all physical and mid 30's for all the effect types. Especially noticeable in last fight where i boosted holy resistance to ridiculous lvls and intentionally took hits and was still scratching my head as the math did not add up.
Key point first hit which is exactly where you are. 50-99......which you can just do with much lighter complete sets like veterans.
weapon arts are possibly the worst abusers of hyper armour though with high poise.
(unless ofc you're talking pvp in which case i have no clue)
