If you want bleed, i reccomend you morgot's or mohgs weapon.
well i dont do pvp, i was reffering to PvE
With high upgrades you'll have well above 100 bleed build-up for one of the fastest weapon types to be dual-wielded.
In one second you will be dealing 600+ bleed build-up easily, meaning that half a combo can bleed anything that can bleed.
Just don't get too greedy, you will have to rely on dodges dual-wielding stuff.
Also, true easy modo is high int magic with a certain spell and spirit summon.
Or doing the rot/poison cheese whenever possible.
Going into melee is instantly not-easy modo. Even if you have a bleed build, you will need to dodge. Bleed just cuts the time you spend in close quarter combat by 2/3, which seems about right considering how HP spongy everything is.

A good thing to build yourself around for something easy is just a strength build where you only put points to str and vig with dex to mean weapon requirements.
