Spend your time with upgrading a few other weapons, try other strategies or ashes of war, use all movesets the weapons have to offer. Well, and level up your vigor.
When he charges up and starts rolling + jump attacking - dodge the jump attack and get some hits in.
Keep in mind that using nepheli will boost godrick's health so you might want to do it on your own. Gives you also more opportunities to learn how to avoid certain attacks better.
Elden Ring takes away all the mental shortcuts that previous Souls games may have given you to be able to spot-react to much of anything: You just need to know what tenth-of-a-second window every individual attack in the game gives you to dodge and in what direction to dodge.
For general advice though, you want to keep Godrick at arm's reach at all times; the storm vortex move is fast enough that you would need to spot-dodge in reaction to Godrick doing any within the span of a couple frames animation in order to avoid it in time; but once used, it's your signal that Godrick's about to do something that you can reliably punish.

its actually a very fun boss once you get his attack patterns down
The muscle memory part might be correct for people who does not use Summons... but else?
I'm far from good at Soulsborn Games and most bosses gets easy with Sums, specially when you level them up a bit and use the correct ones for the boss you fight with.
At this point I even intent to not use sums/ash for my NG+ for most bosses (Melania maybe, as the fight su...) as Godrick for example was a first-Try, used the Golden Sum Nephli and she Tanked the Boss like a Boss through P1 and half of P2, while I could Bleed him dead with my +2 Uchikatana... it was not that I won the fight because of skill it was pure luck+sum.
The same goes for 90% of the Bosses, besides some special attacks of some bosses, you do not need to muscle memory anything. More than 10 Try's are not needed if you Sum and use a strong Build (I did use Bleed due to Samurai start without knowing how strong it would be) so that most bosses just get down to "outDPS their skills". As sooner as they are dead, as less things you need to dodge or know about them. Worked like a Charm up until Melania, the only Boss I needed more than 10 Try's for (40 around).
So basically the main Tip for people like me who use Sum's and are willing to use everything they can muster to win Fights would be - get stronger Items/Sums.
Level your Ash, get a Weapon with a good status builder (Frostbite, Bleed or Rot which will be hard to find early), get some Vigor (your damage early does not come from stats. You will need 80+ levels to get scaling worth the effort, +level and using the correct stat-change like heavy will be far more effective) and just try to identify one Skill you can easy punish, force the boss to use that skill - you win.
Sure this makes the Game pretty easy most of the Time, but after a while you will get better at the mechanics and start to "hardmode" bosses for yourself, with limiting your Tactics down (or you simply dont do this and just enjoy that you can win basically all fights, nothing wrong with that :D).
So for Godrick - get a better Weapon, change the scaling to heavy. Getting it to +3 is easy early and enough for the fight.
Get a good Ash and maybe 1-3 level on it as well. (even the basic Jellyfish could do the trick).
Abuse Nephi and let her Tank.
Learn one Trick of him and how to force that one attack - punish it. For Godrick the Flamethrower thing were he does not move seems to be the best, as he keeps shooting it, even if you underrun him and smack him like a Red-Button.
With this tactic you can beat nearly every Boss in this Game, specially after you get the Mimic Ash and when you get some good Selfbuffs through Items/Spells.
It might be that people will look down on you, because "you do not play Elden Ring like a Soulsborn Game should be played" but just ignore these and have Fun. It's your own Playthrough afterall :)
EDIT:
To be more clear about the scaling/level part, not +80 on one stat, but character level 80+ ;) as I would not tell anyone to push all into a damage scaling skill, besides you are really good at the Game. Dont muss out on Vigor and Endurence for good Amor.
