So for Str builds, its just a requirement
If you level DEX you can wield weapons with higher DEX requirement and you can increase damage according to DEX Scaling. E is bad scaling, D better to A and S is best. Better scaling means more damage per DEX level
Also some consumables like throwing knive profit from DEX.
I didn't knew, that you can cast faster...
And even then its minor
animations are set in stone for weapons however.
generally if you want the most damage out of a weapon for the least stat investment you go 54 strength so when you two-hand you get 80 strength bonus. in some cases some weapons like uchigatana or nagakiba actually do more damage on heavy infusement than dexterity. use dex if you intend to weave spells inbetween your attacks.
