There are two entrances to the fight - he should be *inside* the one further north. You also have to have advanced his quest far enough where you talk to him in a lava lake in Mt. Gelmir (behind where you fight a magma worm) and exhaust his dialogue for him to be summonable. As I recall you can also use a spirit summon in addition to him. He makes the fight dramatically easier.
I believe Fire Giant can also still be cheesed by luring him to fall off the little cliff in the arena.
Use Torrent to close the distance, dismount before he does the bowl swipe and be sure to roll it if you dismount early. If you get the timing down, you can certainly use the dismount i-frames, but I never managed that personally.
Aim for the leg with the braid, damaging that is the weak spot. Staying behind the leg, hitting the ankle will get the best results. If you poise break him, don't go for the critical hit, it puts you in a really bad position that usually will get you killed.
On the second phase, aim for the hands, they provide bonus damage on hit, but are a bit riskier to stay in. If you don't feel comfortable with that level of aggression, you can once again stay close behind him, when he bends forward run backwards, this usually indicates he is doing the flame blast which will kill you.
When he fires the flaming balls in the second phase, get close to them so they pulse one time, then roll away after a short delay. Getting rid of them gives you a lot more time to focus on the giant.
Other than that, good luck. He can be really annoying sometimes.

If you don't mind cheesing him, you seriously NEED to watch a YouTube channel named Tyrannicon. He has a whole "Elden Ring Guru" series where he talks about how to kill bosses in alternate ways.
If you can get the talismans for making bows and crossbows shoot farther and do more damage, and equip those along with having a decent bow and crossbow, you can actually use Torrent to jump OUT of the arena area and kill him with arrows/bolts from a distance. The actual hardest part of killing him this way is timing the jump out of the arena so you land back on the chain platform. You have to do this jump out of the arena twice, once for phase 1 and once for phase 2.
Really just takes patience and preparation. Get a bow and crossbow and level them as much as you can. Then stock up on the maximum amount of arrows and bolts you can have at one time. (You have four missile slots which hold 99 each, so you can carry a max. of 396 of arrow/bolt ammunition.) Plus you can pull more from your inventory any way if your equipped ammo runs out. So you have access to way more than the 396 if you have stocks in inventory.
After you jump out of the arena you cross the huge chain and end up back across the chasm near the grace point, and you can shoot him from across the chasm. He can't reach you with the shield bash or earthquake attack. Occasionally his fire attacks can reach you, but if you see him prepping one, just run directly backwards and get out of range.
This genuinely works, I did it a couple nights ago! Forget all the "git gud" crap. Players who declare you have to fight him on foot, it's the only "legitimate" way to kill him. Nonsense.
I tried 20 times to kill him on foot. Forget it. I'm not judging myself, and I'm not denying myself from experiencing the rest of the game just to adhere to a pathological narcissistic "git gud" religion.
