All the other greatswords have only one good stat or use INT or FTH.
But with a Quality affinity, literally EVERY greatsword gets a B/B.

What is quality affinity? Which one should I use for claymore, and how to you find it?
For exemple, a weapon with the "Heavy" affinity increases the STR scaling, and removes all the others.
A "Quality" weapon balances the STR and DEX scalings and reduces the others.
So if you have, say, 30 STR and 30 DEX, a Quality weapon with B/B will increase your damage more than if your weapon was "Heavy" with an S in STR but nothing in DEX.
To apply an affinity to a weapon, you need to equip an Ash of War of the same affinity (each Ash has an affinity assigned to it, for exemple "Square Off" is a Quality Ash of War).
OR (and this what you want), you need to loot a special Whetblade that will give you the option to put any affinity on any Ash of War.
The whetblade that unlocks the Quality affinity (also Heavy and Keen) is located in Stormveil Castle, maybe you already have it.

Heavy claymore with 80 str gives 222 AR.
Quality claymore with 40/40 str and dex gives 191 AR.
with 80/80 str and dex quality claymore get 236 AR.
So yeah, quality kinda sucks.
The 150 is the weapon's base damage. The 200 is how much extra damage you add with your own stats.
So for exemple, say a standard weapon has 150+200 (no affitiny). When you apply the Quality affinity, it might become 100+300.
The base damage will be reduced to 100, but if you have a lot of STR and DEX, the extra damage will go up to 300. You gain 50 damage in the end.
You need to try for yourself, go to a grace, apply and Ash of War and the Quality affinity, and simply compare if you gain or lose total damage.
Which affinity do you mean when you say with 80/80? You mean without affinity?
Like the guys above said, Quality only gets really good at very high levels of STR/DEX, like 60/60 or more. If you have less than that, you might be better off with other affinities.
80 points in your characters strength and dexterity stats. 80 is the soft cap beyond which it's basically pointless to level further.
