The Mausoleums without bells I think are all just hanging out in the Mausoleum Compound area in north east Liurnia of the Lakes, there are two of these. They exclude the Shardbearer Demigods, so no Radahn, Godrick, Rennala, Rykard, Morgott, Malenia, or Mohg. Every other rememberance will be available.
They let you duplicate any rememberances you've obtained in that playthrough only (so like, going into NG+ you won't be able to select an endgame boss' rememberance to duplicate until you've beaten them again), and you can duplicate them as much as you'd like. However, you can only get each reward from a rememberance once per playthrough. They all only offer two rewards, so in a single playthrough, it's only worth duplicating one once, for its second reward.
However, NG+ resets this limit, so if you take unused rememberances into NG+, you can get those rewards again once each.
So if you wanted a dupe of a weapon from an endgame boss, it's smart to duplicate that rememberance and then hold onto it for NG+, to use after you've beaten your first Shardbearer.
So there's 7 total, 5 of which have bells, is that correct?
And ones with bells mean that they can do all remembrances or just shardbearer remembrances?
(and ones without bells can only do non-shardbearer remembrances?)
Bell mausoleums can duplicate ALL remembrances, but are unique as they can duplicate shard bearer remembrances, which regular mausoleums cannot. So yes, you are correct.
